This recipe is a twist on the classic basil pesto, using walnuts instead of pine nuts â theyâre cheaper and easier to find â and it takes just 10 minutes to make. The best part? You can freeze this pesto, making it a convenient way to store any extra basil. Here's how it works.
Ingredients
Youâll need the following:
100g basil
100ml olive oil
3g salt (around 1 teaspoon)
40g walnuts
50g Parmesan cheese
1 garlic clove (optional)
2 ice cubes

The only tool youâll need is a decent blender. Simply toss all the ingredients into it and blend until you have a smooth pesto. Then, divide the mixture into small containers, so you can freeze them and use as needed. Of course, you can adjust the proportions depending on how much basil you have.
