Hi, and welcome to the second special edition for this holiday season ! 👋

As you may know by now, this month I am mixing things up to focus on quick and easy recipes that can be particularly helpful for end-of-year gatherings and other social events. So this week, I am bringing you 4 quick and delicious desserts 🧁🧁🧁.

So, here are this week's recipes:

  1. Frozen pistachio yogurt

  2. Salame al cioccolato

Frozen Pistachio Yogurt

Pro-tip: this is a great dessert but could also be used as a protein-rich snack after training!

Ingredients

  • 150 g unsalted pistachios (soaked in water for 2 hours, plus extra for garnish)

  • 500 g plain Greek-style yogurt

  • 100 ml maple syrup or similar (adjust to taste)

Kitchen Tools

  • Blender

  • Freezer-safe containers (4 small or individual-sized containers)

  • Spatula

  • Mixing bowl

Instructions

  1. Place 150 g of unsalted pistachios in a bowl, cover with water, and leave to soak for 2 hours. Drain and pat dry with a clean towel.

  1. In a blender, combine the soaked pistachios, yogurt, and maple syrup. Blend until smooth and creamy, ensuring the pistachios are fully processed for a rich texture.

  1. Divide the mixture evenly between 4 small freezer-safe containers (or more if using smaller portions). This way, it’s ready to serve directly without needing to portion later. Smooth the tops with a spatula and cover securely.

  2. Freeze for 4-6 hours.

  1. Remove the containers from the freezer, garnish with chopped pistachios for extra crunch, and serve immediately.

Tips

  • Freezing in smaller containers not only makes serving easier but also prevents melting during portioning.

  • For a sweeter treat, drizzle a little maple syrup top before serving.

  • The soaking step ensures the pistachios blend into a smooth, creamy texture.
