So, here are this week's recipes:
Frozen pistachio yogurt

Frozen Pistachio Yogurt
Pro-tip: this is a great dessert but could also be used as a protein-rich snack after training!
Ingredients
150 g unsalted pistachios (soaked in water for 2 hours, plus extra for garnish)
500 g plain Greek-style yogurt
100 ml maple syrup or similar (adjust to taste)

Blender
Freezer-safe containers (4 small or individual-sized containers)
Spatula
Mixing bowl
Instructions
Place 150 g of unsalted pistachios in a bowl, cover with water, and leave to soak for 2 hours. Drain and pat dry with a clean towel.
In a blender, combine the soaked pistachios, yogurt, and maple syrup. Blend until smooth and creamy, ensuring the pistachios are fully processed for a rich texture.
Divide the mixture evenly between 4 small freezer-safe containers (or more if using smaller portions). This way, it’s ready to serve directly without needing to portion later. Smooth the tops with a spatula and cover securely.
Freeze for 4-6 hours.
Remove the containers from the freezer, garnish with chopped pistachios for extra crunch, and serve immediately.
Tips
Freezing in smaller containers not only makes serving easier but also prevents melting during portioning.
For a sweeter treat, drizzle a little maple syrup top before serving.
The soaking step ensures the pistachios blend into a smooth, creamy texture.
